In the heart of Lausanne, just steps away from the train station, a delightful haven for pastry enthusiasts has emerged: Flavours Lausanne. This charming café and patisserie is the brainchild of Valérie Nguyen Dang, affectionately known as Val, who transitioned from a corporate career to pursue her passion for baking.

Val’s journey into the world of patisserie began in 2013, driven by her love for creating delectable treats. Originally from the French-speaking part of Switzerland with Vietnamese roots, she studied business and marketing at the University of St. Gallen. But the call of butter, sugar, and creativity proved too strong. After winning an amateur pastry competition in Geneva, she knew she was onto something—and Lausanne is all the sweeter for it.

Val

Flavours Lausanne officially opened its doors in early 2025, taking over the space previously occupied by Yomi. The café’s refreshingly soft pink hues and cozy seating make it the perfect spot to linger over a pastry and a coffee. More than just a bakery, it’s a place where indulgence and creativity go hand in hand.

What’s on the Menu?

The menu at Flavours Lausanne is a testament to Val’s commitment to quality and craftsmanship. Guests can savor an array of homemade pastries, including:

We recently had the chance to do just that, gathering after hours for a bento cake decorating workshop with Val herself. Picture this: piping bags in hand, a little too much buttercream on our fingers, rosé in our glasses, and music setting the mood. Val guided us through techniques with the kind of ease that makes even the least artistic among us feel like cake whisperers. It was tactile, therapeutic, and—dare we say—surprisingly meditative. Plus, there’s nothing quite like walking home with a tiny, beautifully imperfect cake that you decorated yourself.
